My Fig Newtons 2.0 - Made with oat flour!
A chewier, denser take on my fig newtons, also made cheaper by using oat flour and other inexpensive ingredients. Fig it upppp.
Fig newtons w/ oat flour
For the crust:
2 and 1/2 cup oat flour (just blend rolled oats until you have a fine flour!)
1 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
1/8 tsp sea salt
2 tbsp maple syrup
1 cup applesauce
For the filling:
2 cups dried Turkish figs
Juice from 1/2 a lemon (not totally necessary, just adds a lil tang!)
1/4 cup water
1/2 tsp cinnamon
Preheat oven to 350F and line an 8x8 baking dish with parchment paper.
Blend filling ingredients together until smooth.
In a mixing bowl, add all crust ingredients and fold with rubber spatula to combine.
Add HALF the crust ingredients to baking dish, spread evenly to the edges, then spread filling on top.
Follow by spreading the rest of the crust on top (helps to start spreading in hands first and then lay on top and finish spreading) and bake for 25-30min.
Stick a toothpick in and if it’s clean you’re all good to let cool completely, slice, and enjoy!
